This is a great summer side dish with anything from chicken to meat, and is great alone.
These stuffed tomatoes are full of yummy ingredients, and are very nutritious.
It is also my mom’s recipe!
4 big firm tomatoes
150 gram white toast, shredded
2 hard boiled eggs, cut into very small squares
1 garlic, crushed
1 tablespoon parsley, thinly cut
cheddar cheese, cut into small squares
salt & pepper
Cut the very top f the tomatoes, and empty the insides. Mix all the other ingredients and fill the tomatoes with the mixture. Put a small piece of butter on top of each tomato, and bake in a medium heat oven for 20 minutes.
