Easy Gazpacho

While I was in Spain, I fell in love with the food!

The Paella is absolutely unbelievable, but the Gazpacho was fantastic! Especially in the heat, this light vegetarian soup is fresh, cool and delicious … yummy !

It is so easy to make, and the ingredients are cheap!

Ingredients:

4 cups cold tomato juice
1 small, well minced onion
2 cups freshly diced tomatoes
1 cup minced green pepper
1 diced cucumber
2 scallions, chopped
1 clove crushed garlic
Juice of 1/2 lemon
1 teaspoon each tarragon & basil
Dash of ground cumin
Dash of Tabasco sauce
Salt & Pepper to taste

Combine all ingredients & chill for at least 2 hours. Puree if desired.
