Chickpea Parmesan Balls!


These “veggie” balls are so easy to make and a hit with everyone even kids!
They’re baked, so no oily fingers!!
You can make them as finger food and dip them in ketchup or sweet & chili sauce, or you can make them and then top spaghetti with tomato sauce with them … They make a great substitute to meat balls.

3 slices white bread , crusts off and torn
80 gr Parmesan
400 gr can chickpeas , drained
5 garlic cloves, roughly chopped
2 tsp dried oregano
2 tsp dried basil – or fresh if available
1 egg , beaten
salt & pepper

Put the bread and roughly chopped Parmesan in a food processor and mince to crumbs, then throw in the chickpeas, roughly chopped garlic, oregano, basil and some seasoning.

Pulse well then add the egg while the motor is running to bind together. Shape into 19 small balls. Transfer to an oiled baking sheet and cook in the oven for 15 mins, turning halfway.
